Creamy Smashed Miso Pea and Feta Pita
Ingredients
- 2 wholemeal pitas
- 200g frozen peas, cooked in stock
- 2 large garlic cloves, minced
- 1/2 lemon (zest and juice)
- 1/2 tablespoon honey
- 1 tablespoon soy sauce
- 1/2 tablespoon miso paste
- 1/2 teaspoon chilli flakes
- 1 tablespoon light mayo
- Small handful mint leaves, chopped
- 2 spring onions, sliced
- 80g crumbled feta
Preparation
Drain your peas well and pat dry.
Smash in a bowl and combine with all of the ingredients except the feta.
Season well and store in the fridge until ready to cook.
Toast your pitas very briefly and halve.
Fill with the pea smash and feta.
Place in your toaster bags and toast until crunchy and warmed through.
Finish with a drizzle of honey and another sprinkling of chilli flakes.
