Vegan Veggie Sandwich with Basil Pesto
Ingredients
- 3 cups basil (for pesto)
- juice of one lemon (for pesto)
- 1/4 cup olive oil (for pesto)
- 1/3 cup pine nuts or cashews (for pesto)
- 2 garlic cloves (for pesto)
- himalayan sea salt to taste (for pesto)
- avocado
- leafy greens
- tomato slices
- sourdough bread
- melty shredded vegan cheese
Preparation
Add all basil pesto ingredients except olive oil to a food processor and pulse until evenly chopped.
Slowly add olive oil through the top of the processor and pulse until combined to make the pesto.
Spread the prepared pesto on sourdough bread.
Add avocado, leafy greens, tomato slices, and melty shredded vegan cheese to assemble the sandwich.
Serve immediately.
