Delicious Vegan Chocolate Chip Cookies

Ingredients

  • 1 cup almond flour or other nut flour
  • 1/4 cup gluten-free flour
  • 1/4 cup arrowroot flour
  • 3 tbsp maple syrup
  • 1/4 tsp himalayan salt
  • 1/4 cup coconut oil (not melted)
  • 3 tbsp coconut sugar or stevia equivalent
  • 1/4 cup smooth peanut butter
  • 1 golden flax egg (2 1/2 tbsp water, 1 tbsp golden flax meal)
  • 1/2 tsp baking soda
  • 1/2 cup vegan chocolate chips (unsweetened or stevia sweetened)

Preparation

  1. Preheat oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper.

  2. Prepare your flax egg by mixing water and flax meal. Let sit for about 10 minutes.

  3. In a bowl add arrowroot flour, almond flour, baking soda, and salt.

  4. In a separate bowl mix together the nut butter and coconut oil with an electric mixer.

  5. Add coconut sugar, maple syrup and mix for about 2 minutes until smooth.

  6. Add in the flax egg and mix until combined.

  7. With a spatula stir in the flour mix until a sticky dough forms.

  8. Fold in chocolate chips until combined.

  9. Scoop dough onto the baking sheet with a medium sized cookie scoop. Make sure to place the dough scoops 1-2 inches apart since they will spread.

  10. Bake in the oven for 12-15 minutes until edges begin to brown.

  11. Remove from oven, wait 2-3 minutes for them to cool a bit and then transfer onto a rack to cool completely.
