Easy Vegan Chickpea Avocado Toast

Ingredients

  • 1 large avocado
  • 1 can of chickpeas
  • 1/2 tsp olive oil
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp mild chilli powder
  • Pinch of turmeric
  • Lime (for mashing and serving)
  • Salt and pepper (to taste)

Preparation

  1. Roast chickpeas at 180C/360F for 20 minutes in olive oil until crunchy.

  2. Remove chickpeas, shake in spices, and return to oven for a few more minutes to absorb flavor.

  3. Mash avocado with lime, salt, and pepper.

  4. Serve the spiced chickpeas on top of toast with the mashed avocado and a squeeze of lime on the side.

  5. Enjoy!
