Easy Vegan Chickpea Avocado Toast
Ingredients
- 1 large avocado
- 1 can of chickpeas
- 1/2 tsp olive oil
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp cumin
- 1/2 tsp smoked paprika
- 1/2 tsp mild chilli powder
- Pinch of turmeric
- Lime (for mashing and serving)
- Salt and pepper (to taste)
Preparation
Roast chickpeas at 180C/360F for 20 minutes in olive oil until crunchy.
Remove chickpeas, shake in spices, and return to oven for a few more minutes to absorb flavor.
Mash avocado with lime, salt, and pepper.
Serve the spiced chickpeas on top of toast with the mashed avocado and a squeeze of lime on the side.
