Fluffy Cake with Only Three Ingredients

Ingredients

  • 5 eggs
  • 1 cup (180 g) sugar
  • 2 cups (300 g) cornstarch (Maizena)
  • 1 teaspoon (5 ml) vanilla extract (optional)

Preparation

  1. Separate the egg whites from the yolks

  2. Beat the egg whites until stiff peaks form

  3. Continue beating and add the yolks one at a time

  4. Continue beating and gradually add the sugar

  5. Beat for 5 minutes, then stop the mixer

  6. Gradually add the cornstarch and mix gently with a wire whisk

  7. If desired, add the vanilla extract and mix until well incorporated

  8. Pour the batter into a greased and cornstarch-dusted 22cm pan

  9. Bake in a preheated oven at 180Β°C for about 40 minutes or until golden brown

Tips

  1. Always fold the batter from the bottom up to maintain lightness
