Fun Pink Pitaya Oatmeal Breakfast Bowl
Ingredients
- 3/4 cup rolled oats
- 1 tsp pink pitaya powder
- 1/2 tsp cinnamon
- 1 tsp vanilla
- 1 fresh wedge of pink pitaya
- 1 cup water
Toppings
- 1/2 cup frozen blueberries
- 2 pink pitaya hearts
- 2 homemade dark chocolate hearts
- 2 Tbsp plain yogurt
- passion fruit
Preparation
Cook the oatmeal mixture at low temperature until it reaches a nice creamy thick consistency.
Cook the frozen blueberries down to a nice compote.
Assemble the bowl by adding the cooked oatmeal and topping with the compote, pink pitaya hearts, dark chocolate hearts, plain yogurt, and passion fruit.
