Banana Cinnamon Oats with Stewed Blueberries
Ingredients
- 1/2 cup rolled oats
- 1 sliced banana
- 1/4 tsp cinnamon
- 1 cup unsweetened vanilla almond milk
Blueberry jam
- 1/2 cup frozen blueberries
- 1 tsp chia seeds
- a pinch of cinnamon
- sugar or maple syrup (optional)
Preparation
Add the oats ingredients to a saucepan and bring to a simmer.
Cook while stirring occasionally for 5 minutes until the oats thicken.
Top the oats with strawberries, bananas, pepitas, and stewed blueberries.
Enjoy warm, especially in winter for a cozy feel.
Jam making
Add blueberries, chia seeds, and cinnamon to a small saucepan.
Sweeten with sugar or maple syrup if a sweeter taste is desired.
Stir and cook consistently as berries warm and release juices until they thicken.
Lightly mash for a jam-like consistency if preferred.
Substitute chia seeds with cornstarch or agar agar if unable to use them.
