Banana Cinnamon Oats with Stewed Blueberries

Ingredients

  • 1/2 cup rolled oats
  • 1 sliced banana
  • 1/4 tsp cinnamon
  • 1 cup unsweetened vanilla almond milk

Blueberry jam

  • 1/2 cup frozen blueberries
  • 1 tsp chia seeds
  • a pinch of cinnamon
  • sugar or maple syrup (optional)

Preparation

  1. Add the oats ingredients to a saucepan and bring to a simmer.

  2. Cook while stirring occasionally for 5 minutes until the oats thicken.

  3. Top the oats with strawberries, bananas, pepitas, and stewed blueberries.

  4. Enjoy warm, especially in winter for a cozy feel.

Jam making

  1. Add blueberries, chia seeds, and cinnamon to a small saucepan.

  2. Sweeten with sugar or maple syrup if a sweeter taste is desired.

  3. Stir and cook consistently as berries warm and release juices until they thicken.

  4. Lightly mash for a jam-like consistency if preferred.

  5. Substitute chia seeds with cornstarch or agar agar if unable to use them.
