Gluten-Free Brookies with Brownie Mix

Ingredients

  • 1 box gluten-free brownie mix (King Arthur Flour)
  • 2 eggs
  • 2 tablespoons water
  • 1 stick butter
  • 1/2 to 1 cup milk chocolate chips (Ghirardelli)
  • 1/3 cup brown sugar
  • 1/3 cup granulated sugar
  • 1/2 cup butter
  • 1/2 teaspoon vanilla extract
  • 1 egg
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 1/4 cups gluten-free flour (King Arthur Flour measure for measure)
  • 1/2 cup chocolate (Ghirardelli)
  • Additional chocolate chips for topping

Preparation

  1. Preheat oven to 350 degrees Fahrenheit.

  2. Grease an 8x8 inch square pan.

  3. Mix the brownie ingredients together and spread the mixture in the prepared pan.

  4. For the cookie dough, beat 1/3 cup brown sugar, 1/3 cup granulated sugar, and 1/2 cup butter together for 3 minutes or until fluffy.

  5. Mix in 1/2 teaspoon vanilla extract, 1 egg, 1/2 teaspoon baking powder, 1/4 teaspoon baking soda, and 1 1/4 cups gluten-free flour.

  6. Stir in 1/2 cup chocolate.

  7. Drop spoonfuls of the cookie dough over the brownie layer; it does not need to fully cover the brownies.

  8. Sprinkle additional chocolate chips on top.

  9. Bake for 50-60 minutes.

  10. Enjoy immediately, preferably while watching a movie like Molly’s Game for a fun family activity.
