Choco Peanut Butter Gluten-Free Cookies

Ingredients

  • 280 g gluten-free flour
  • 150 g peanut butter
  • 225 g butter (mixed with margarine)
  • 180 g sugar (partially palm sugar)
  • 2 eggs
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • Choco chips as needed
  • Chopped nuts as needed

Preparation

  1. Mix butter until soft, add peanut butter, mix until combined

  2. Add sugar, mix until combined

  3. Add eggs one at a time, mix until smooth

  4. Add the flour mixture, baking powder, baking soda, chocolate chips, and chopped nuts. Stir with a spatula

  5. Preheat oven to 160 degrees Celsius

  6. Scoop dough with an ice cream scoop or two spoons, shape into balls. Place on baking sheet. Press with a fork until slightly flattened

  7. Bake until done
