Homemade Mince Pies for Christmas Baking

Ingredients

  • 3 parts plain flour
  • 2 parts margarine
  • 1 part icing sugar
  • mincemeat

Preparation

  1. Add the three ingredients to a bowl and mix together by hand until a dough is formed. If the mixture is very sticky, add in a bit more flour.

  2. Roll out the dough until you have reached your desired thickness of pastry. Aim for about 1/2 centimetre, maybe a touch less.

  3. Grab a circular cookie cutter and cut out lots of circles.

  4. Grease a cupcake tin and start adding the pastry circles into the tin. Press the pastry down so it takes on the shape of the tin.

  5. Add a tablespoon of mincemeat to each pastry case and then top with another pastry circle.

  6. Bake in the oven at 180 degrees for 10-12 minutes.

  7. Leave to cool in the tin before removing them.

Notes

  1. Use each part as 1/2 cup to make enough pastry for 12 mince pies.
