Lemon Berry Oat Bars
Ingredients
- Crust and Topping
- 1 1/2 cup rolled oats
- 3/4 cup almond flour
- 1/2 cup coconut sugar
- 1 tbsp lemon zest
- 1/4 tsp baking powder
- 1/4 tsp salt
- 2/3 cup room temperature coconut oil (soft, not melted)
- Filling
- 2 1/2 cups fresh blueberries
- 7 tbsp raspberry jam
- 1/2 tsp vanilla extract
- 1 pinch salt
Preparation
Preheat oven to 375 F and line an 8x8 baking pan with parchment paper. In a large bowl, combine all crust ingredients except the oil. Once mixed, use your hands to incorporate the coconut oil until a dough forms. Gently press half of the mixture onto the bottom of the prepared baking pan. Bake for 10 minutes, while you prepare the filling
In a medium bowl, mix together all ingredients. Spoon over the warm crust and sprinkle the remainder of the crust mixture on top. Bake for another 22-27 minutes or until the crust has browned slightly and the filling is bubbly
Remove from the oven and allow to cool completely. Chill for 2 hours before slicing
