Lemon Berry Oat Bars

Ingredients

  • Crust and Topping
  • 1 1/2 cup rolled oats
  • 3/4 cup almond flour
  • 1/2 cup coconut sugar
  • 1 tbsp lemon zest
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 2/3 cup room temperature coconut oil (soft, not melted)
  • Filling
  • 2 1/2 cups fresh blueberries
  • 7 tbsp raspberry jam
  • 1/2 tsp vanilla extract
  • 1 pinch salt

Preparation

  1. Preheat oven to 375 F and line an 8x8 baking pan with parchment paper. In a large bowl, combine all crust ingredients except the oil. Once mixed, use your hands to incorporate the coconut oil until a dough forms. Gently press half of the mixture onto the bottom of the prepared baking pan. Bake for 10 minutes, while you prepare the filling

  2. In a medium bowl, mix together all ingredients. Spoon over the warm crust and sprinkle the remainder of the crust mixture on top. Bake for another 22-27 minutes or until the crust has browned slightly and the filling is bubbly

  3. Remove from the oven and allow to cool completely. Chill for 2 hours before slicing
