Lemon Cake with Coconut Frosting
Ingredients
Cake
- 3 eggs
- 1/2 cup natural lemon juice
- 1/2 cup cold milk
- 1 cup oil
- 2 cups sugar
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 tablespoon lemon zest
Frosting
- 200 ml coconut milk
- 1 can (14 oz) sweetened condensed milk
- 1 cup natural lemon juice
- Lemon zest, for garnish
Preparation
Cake
Blend eggs, lemon juice, milk, oil, and sugar in a blender until smooth
Transfer to a bowl and gradually mix in flour, baking powder, and lemon zest
Pour batter into a greased and floured tube pan
Bake in a preheated medium oven until golden
Remove from oven, let cool until lukewarm, then unmold
Frosting
Blend coconut milk, sweetened condensed milk, and lemon juice in a blender until smooth
Pour over the cake, garnish with lemon zest, and serve
