Lemon Cake with Coconut Frosting

Ingredients

Cake

  • 3 eggs
  • 1/2 cup natural lemon juice
  • 1/2 cup cold milk
  • 1 cup oil
  • 2 cups sugar
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 tablespoon lemon zest

Frosting

  • 200 ml coconut milk
  • 1 can (14 oz) sweetened condensed milk
  • 1 cup natural lemon juice
  • Lemon zest, for garnish

Preparation

Cake

  1. Blend eggs, lemon juice, milk, oil, and sugar in a blender until smooth

  2. Transfer to a bowl and gradually mix in flour, baking powder, and lemon zest

  3. Pour batter into a greased and floured tube pan

  4. Bake in a preheated medium oven until golden

  5. Remove from oven, let cool until lukewarm, then unmold

Frosting

  1. Blend coconut milk, sweetened condensed milk, and lemon juice in a blender until smooth

  2. Pour over the cake, garnish with lemon zest, and serve
