Matcha and Pistachio Cookies with White Chocolate

Ingredients

  • 250g vegan butter block
  • 300g caster sugar
  • 300g self-raising flour
  • 100g pistachios, blitzed until finely ground
  • 1 tsp Matcha powder
  • 100g white chocolate (optional)

Preparation

  1. Soften the vegan butter by microwaving it for 1 minute.

  2. Add the softened butter to a mixing bowl and mix well with the caster sugar.

  3. Mix in the Matcha powder until evenly distributed.

  4. Add the finely ground pistachios and self-raising flour to the bowl and mix until well combined. You may want to use your hands.

  5. Roll walnut-sized balls of the mixture with your hands and place them on a lined baking sheet, leaving enough room between each cookie for spreading.

  6. If using, dot the tops of the cookies with a few pieces of white chocolate.

  7. Bake the cookies at 180°C for 10 minutes.

  8. Once baked, let the cookies cool on the trays for a few minutes before transferring them to wire racks.
