Minang-Style Thick Duck Egg Omelette
Ingredients
- 3 duck eggs
- 5 shallots
- 3 kaffir lime leaves
- 2 spring onions
- 1 turmeric leaf
- 3 stalks celery
- Red chili sambal (made with curly chilies, shallots, and red tomatoes)
- Ground curly chilies
- 1/2 teaspoon black pepper
- 1 teaspoon salt
- 50 ml oil
- 3 tablespoons all-purpose flour
Preparation
Sauté the red chili sambal until cooked.
Mix the duck eggs with flour, pepper, salt, red chili sambal, spring onions, turmeric leaf, celery, and shallots until well combined.
Heat oil and fry the egg mixture until evenly cooked.
Serve while still warm.
