No-Bake Snickerdoodle Protein Bites

Ingredients

  • 1 1/4 cup homemade oat flour (can also use almond flour)
  • 1/4 cup vanilla bean protein blend
  • 2 tbsp ground cinnamon
  • 1 tsp vanilla extract
  • 1/4 - 1/3 cup sunbutter
  • 1/4 cup maple syrup
  • 1/2 cup ground dates
  • 1/8 cup honey

Preparation

  1. Grind up oats and measure out enough flour, then transfer to a bowl.

  2. Measure out dates, wash them, and grind them in the food processor.

  3. Mix in maple syrup, protein powder, honey, vanilla, and cinnamon.

  4. Add more honey, maple syrup, or dates if the batter isn’t sticky enough.

  5. Form the mixture into balls and put them in the freezer for 20 minutes.

  6. Dust the balls with more cinnamon and protein powder.

  7. Store in the freezer for up to a month.
