Protein Bread with Lentils and Flax Seeds

Ingredients

  • 1 cup/ 200 gr dry red lentils
  • 4 tbsp flax seed
  • 3 tbsp brown rice flour (rice flour)
  • 1 tbsp potato starch (corn starch)
  • 2 tbsp oatmeal
  • 2 tbsp sunflower seeds (or nuts)
  • 1/3 tsp baking soda
  • splash of lemon juice
  • 1/2 tsp salt

Preparation

  1. Soak lentils and flax seeds overnight

  2. Rinse in the morning, add salt, and grind with a blender

  3. Grind oatmeal and seeds in a blender or coffee grinder

  4. Mix all the ingredients in a bowl

  5. Make a round bread shape on the baking tray. Bake it in a preheated 180 ° / 360 F oven for 40-60 minutes. Check readiness with a toothpick

  6. Enjoy with some cream cheese, avocado, and veggies
