Quick and Delicious Tomato Quiche with Puff Pastry
Ingredients
- 1 package (about 270 g) chilled puff pastry
- 500 g mixed cocktail tomatoes
- 1 bunch arugula
- 300 g cream cheese
- 4 medium eggs
- 100 ml milk
- 1-2 teaspoons salt
- freshly ground black pepper, to taste
- chili powder, to taste
- 100 g grated mozzarella
- butter, for greasing the pan
Preparation
Preheat the oven to 200°C conventional or 180°C convection
Grease a 20x26 cm tart pan with butter
Roll out the puff pastry and press it into the pan
Trim the excess pastry
Prick the base of the pastry with a fork
Wash the cocktail tomatoes, pat dry, and place them on the pastry
Wash the arugula, pat dry, and roughly chop; sprinkle over the tomatoes
Mix the cream cheese, eggs, milk, salt, pepper, and chili powder
Stir in the grated mozzarella
Pour the mixture into the pan
Bake in the lower third of the oven for 25-30 minutes
Serve warm
