Quick and Easy Blender Coconut Cake

Ingredients

  • 3 eggs
  • 300 ml milk
  • 2 tablespoons margarine or butter
  • 1 1/2 cups sugar
  • a pinch of salt
  • 2 cups all-purpose flour
  • 1/2 cup cornstarch (Maizena)
  • 1 package (100 grams) shredded coconut
  • 1 tablespoon baking powder

Preparation

  1. In a blender, place the eggs, milk, butter, sugar, and salt

  2. Blend everything for 2 minutes

  3. Add half of the all-purpose flour and blend until mixed

  4. Add the remaining all-purpose flour, cornstarch, and blend for another 2 minutes

  5. Pour this mixture into a bowl and add the shredded coconut and baking powder

  6. Mix everything well and pour into a greased and floured pan

  7. Bake in a preheated oven at 200Β°C for about 30 minutes

  8. Unmold and serve immediately
