Quick and Easy Blender Coconut Cake
Ingredients
- 3 eggs
- 300 ml milk
- 2 tablespoons margarine or butter
- 1 1/2 cups sugar
- a pinch of salt
- 2 cups all-purpose flour
- 1/2 cup cornstarch (Maizena)
- 1 package (100 grams) shredded coconut
- 1 tablespoon baking powder
Preparation
In a blender, place the eggs, milk, butter, sugar, and salt
Blend everything for 2 minutes
Add half of the all-purpose flour and blend until mixed
Add the remaining all-purpose flour, cornstarch, and blend for another 2 minutes
Pour this mixture into a bowl and add the shredded coconut and baking powder
Mix everything well and pour into a greased and floured pan
Bake in a preheated oven at 200Β°C for about 30 minutes
Unmold and serve immediately
