Quick and Easy Choc Chip Baked Oats

Ingredients

  • 5 tbsp (40-50g) porridge oats (gluten-free works too)
  • 3 tbsp plain yogurt or milk (I use soy)
  • 1 tbsp chocolate chips (dark)
  • 1 tsp sweetener/sugar or syrup
  • 1/3 tsp baking powder
  • Squeeze of lemon juice

Preparation

  1. Put all the ingredients into a cup and mix until foamy, ensuring that all the oats are combined from the bottom of the mug. If you have a blender, you can blitz the oats to a powder for a few seconds to achieve a more cake-like texture. Clean the rim of the mug with your finger.

  2. Microwave the mixture on high for 90 seconds. Alternatively, transfer the mixture into a lined oven-proof dish and bake in the oven for 15 minutes at 180°C (350°F), or gas mark 4.

  3. Once cooked, tip the cake onto a plate. Top with extra yogurt and enjoy immediately.
