Protein-Packed Vegan Pop Tart with Raspberry-Chocolate Filling

Ingredients

  • 1/4 cup Oat Flour
  • 1 tbs Sweetener
  • 1 tbs Chocolate Protein
  • 1 tbs Nut Butter
  • 1 tbs Rice Malt Syrup
  • 2-3 tbs Almond Milk
  • Raspberry Jam (for filling)
  • Choc Chunks (for filling)
  • Raspberry jam mixed with coconut yoghurt (for topping)

Preparation

  1. Preheat oven to 180°C.

  2. In a bowl, mix oat flour, sweetener, chocolate protein, nut butter, rice malt syrup, and almond milk together to form a thick dough.

  3. Roll out the dough into a large rectangle and place raspberry jam and chocolate chunks on one half.

  4. Fold the other half over the filling and seal the edges with a fork.

  5. Place the assembled pop tart on a baking sheet and bake for 15 minutes, or until golden brown.
