Quinoa Granola with Nuts Seeds and Honey

Ingredients

  • 2 cup oats
  • 2 large handfuls of nuts - I used hazelnuts, almonds & cashews
  • 2 tablespoons linseed
  • 2 tablespoons pumpkinseeds
  • 2 tablespoons sunflower seeds
  • 4 tablespoons uncooked quinoa
  • 3 tablespoons honey or maple syrup if vegan
  • 1-2 tablespoons coconut oil

Preparation

  1. Mix all ingredients in a large bowl to make sticky clusters.

  2. Spread onto a baking tray and bake at 180°C for about 15-20 minutes, or until golden brown.

  3. Stir the granola halfway to make sure it bakes evenly.

  4. Serve with a dollop of coconut yogurt in a melon bowl for a fun and compostable option.
