Salad with Citrus and Mint

Ingredients

  • 3 cups mixed greens- dandelion, purple kale, and spinach
  • 1 handful mustard and amaranth greens
  • 3 t. fresh mint
  • 1 blood orange peeled and segmented
  • 1/4 red onion thinly sliced
  • 1/2 cup bulgur wheat
  • herb vinaigrette
  • pinch of salt
  • 1 t. maple syrup

Preparation

  1. Soak the bulgur wheat an hour before cooking it. Drain. For this salad, I like to use 1/2 cup dried bulgur. Stir in bulgur and chopped mint. Chill two hours

  2. Arrange 3 cups of mixed greens in a bowl and spoon bulgur over the greens.Toss in segmented blood orange, red onions, and top with mustard and amaranth greens. Garnish with orange nasturtiums or marigold petals
