Salad with Citrus and Mint
Ingredients
- 3 cups mixed greens- dandelion, purple kale, and spinach
- 1 handful mustard and amaranth greens
- 3 t. fresh mint
- 1 blood orange peeled and segmented
- 1/4 red onion thinly sliced
- 1/2 cup bulgur wheat
- herb vinaigrette
- pinch of salt
- 1 t. maple syrup
Preparation
Soak the bulgur wheat an hour before cooking it. Drain. For this salad, I like to use 1/2 cup dried bulgur. Stir in bulgur and chopped mint. Chill two hours
Arrange 3 cups of mixed greens in a bowl and spoon bulgur over the greens.Toss in segmented blood orange, red onions, and top with mustard and amaranth greens. Garnish with orange nasturtiums or marigold petals
