Spinach and Chickpeas Burgers
Ingredients
- 1 can of chickpeas drained and rinsed
- 1 tablespoon of nutritional yeast
- 1 cup of grated carrots
- 1 cup of sliced mushrooms
- 2 cups of spinach
- 1 diced onion
- 1 1/2teaspoon of salt
- 1 1/2 cups of wholemeal bread crumbs
- 1 tablespoon of parsley
- pepper
- 2 crushed garlic cloves
- 1 tablespoon of olive oil (you will need extra to brush the burgers before they go in the oven.
Preparation
In a fry pan add 1 tablespoon of olive oil, spinach, mushrooms, carrot, onion, 1 crushed garlic clove, 1 teaspoon of salt, pepper and sauté for 10 minutes
Set aside to cool
In a blender add your chickpeas, parsley, nutritional yeast, 1/2 teaspoon of salt, pepper, 1 crushed garlic and breadcrumb and cooled mixture then blend
If the mixture appears a bit soft add a bit more breadcrumbs
Once burgers are made line a baking tray and brush with olive oil
Cook for 20 minutes turning them half way and brushing them with olive oil
