Spinach and Chickpeas Burgers

Ingredients

  • 1 can of chickpeas drained and rinsed
  • 1 tablespoon of nutritional yeast
  • 1 cup of grated carrots
  • 1 cup of sliced mushrooms
  • 2 cups of spinach
  • 1 diced onion
  • 1 1/2teaspoon of salt
  • 1 1/2 cups of wholemeal bread crumbs
  • 1 tablespoon of parsley
  • pepper
  • 2 crushed garlic cloves
  • 1 tablespoon of olive oil (you will need extra to brush the burgers before they go in the oven.

Preparation

  1. In a fry pan add 1 tablespoon of olive oil, spinach, mushrooms, carrot, onion, 1 crushed garlic clove, 1 teaspoon of salt, pepper and sauté for 10 minutes

  2. Set aside to cool

  3. In a blender add your chickpeas, parsley, nutritional yeast, 1/2 teaspoon of salt, pepper, 1 crushed garlic and breadcrumb and cooled mixture then blend

  4. If the mixture appears a bit soft add a bit more breadcrumbs

  5. Once burgers are made line a baking tray and brush with olive oil

  6. Cook for 20 minutes turning them half way and brushing them with olive oil
