Summer Peach Tiramisu Dessert for Gatherings

Ingredients

Fruit puree

  • 2 cans peach halves, drained (about 480g net weight per can)
  • 2 packets vanilla sugar
  • 3 tablespoons lemon juice (optional)

Cream and biscuits

  • 300 g ladyfingers
  • 500 g mascarpone cheese
  • 250 g low-fat quark
  • 120 g sugar
  • 250 g heavy cream

Preparation

  1. Drain the peaches in a sieve

  2. Set aside 4 peach halves for garnish

  3. Place the remaining peach halves, vanilla sugar, and lemon juice in a bowl and puree until smooth with an immersion blender

  4. Set aside 4 tablespoons of the fruit puree for garnish

  5. Line the bottom of a 25x30 cm baking dish with ladyfingers, cutting as needed

  6. Spread half of the peach puree over the ladyfingers with a spoon

  7. Beat mascarpone, quark, and sugar until smooth

  8. Whip the heavy cream until stiff and fold into the cream mixture

  9. Spread half of the mascarpone cream over the ladyfingers and smooth

  10. Place another layer of ladyfingers on top

  11. Spoon the remaining peach puree over the ladyfingers

  12. Spread the remaining cream over the top in a light wave pattern

  13. Drop the reserved fruit puree by teaspoon at intervals on the surface and marble roughly with a spoon handle

  14. Chill the tiramisu for at least 2 hours

  15. Before serving, cut the remaining peach halves into wedges and place on the tiramisu
