Tofu Jalfrezi Stir Fry with Vegetables
Ingredients
- 1 block pressed Tofu
- 2 Peppers
- 1 Onion
- 1/2 tablespoon Cumin powder
- 1/2 tablespoon Coriander powder
- 1 tablespoon Garam masala
- Salt
- Oil for stir frying
- 1 tablespoon Cornflour
- Oil for frying tofu
- Salt to taste
Sauce
- 1 Onion
- 1 tin Tinned tomatoes
- 1/2 tablespoon Ginger garlic paste
- 1 Green chilly
- 1/2 tablespoon Turmeric
- 1/2 tablespoon Cumin powder
- 1/2 tablespoon Coriander powder
- 1 tablespoon Garam masala
- 2 teaspoons Salt
- 2 cups Water
- 1 tablespoon Vegan butter
- 1 tablespoon Oil
Preparation
Heat oil in a pan and add onions and ginger garlic paste. Stir until onions are translucent.
Add tomatoes, the listed spices and stir until oil begins to separate. Add 1 cup water, cover pan and cook on low flame for 7-10 minutes.
Let the sauce cool while making the stir fry.
Mix tofu, peppers and onion with listed spices. Heat oil in a wok and stir fry until vegetables are cooked but crunchy.
Blend the sauce with up to 1 cup water to make a thick sauce.
In a bowl, mix the stir fried tofu with 1 tablespoon of sauce and 1 tablespoon cornflour. Fry or roast until crispy.
Heat the remaining sauce and add the stir fried vegetables and crispy tofu into it.
Mix in 1 tablespoon vegan butter.
