Vegan Bowl with Tofu and Vegetables

Ingredients

  • Tofu
  • Coconut oil (optional)
  • Soy sauce
  • Potatoes
  • Pumpkin
  • Avocado
  • Cherry tomatoes
  • Cucumber
  • Red cabbage
  • Hummus

Preparation

  1. Cut tofu into cubes and press out liquid

  2. Preheat a pan over medium heat and add coconut oil if needed

  3. Cook tofu for a few minutes, stirring frequently, until golden brown and slightly crispy

  4. Deglaze with a splash of soy sauce

  5. Cook for 1-2 more minutes on low-medium heat, stirring frequently

  6. Preheat oven to 400°F, cut potatoes and pumpkin into cubes, toss with oil and salt, and bake until golden

  7. Chop avocado, cherry tomatoes, cucumber, and red cabbage

  8. Assemble all ingredients in a bowl and add hummus
