Vegan Brookie Pie with Almond Flour

Ingredients

Brownie layer

  • 1/4 cup almond butter
  • 1/4 cup cocoa powder
  • 1/4 cup coconut oil
  • 1 tsp vanilla
  • 1 cup almond flour
  • 1/2 tsp baking soda
  • 1 egg
  • 3 tbsp almond milk
  • 1/4 cup coconut sugar

Cookie layer

  • 1/4 cup almond butter
  • 1/4 cup coconut oil
  • 1 tsp vanilla
  • 1 cup almond flour
  • 1/2 tsp baking soda
  • 1 egg
  • 1/4 cup coconut sugar
  • 1/2 cup chocolate chips

Preparation

  1. Preheat your oven to 350 degrees and grease an 8'' cake pan with coconut oil.

  2. For the brownie layer: Melt together coconut oil and almond butter slightly in the microwave until smooth.

  3. Add beaten egg and vanilla extract to the mixture and stir to combine.

  4. Add coconut sugar and mix until incorporated.

  5. In a separate bowl, whisk together almond flour, cocoa powder, and baking soda.

  6. Add the dry ingredients to the wet ingredients.

  7. Add almond milk to help incorporate everything together.

  8. Transfer the brownie mixture to the prepared pan and even out until evenly distributed.

  9. For the cookie layer: Melt the coconut oil and almond butter together.

  10. Add beaten egg and vanilla extract to the cookie mixture and stir to combine.

  11. Add coconut sugar and mix until incorporated.

  12. Whisk together almond flour and baking soda, and add to the wet ingredients.

  13. Stir to combine and fold in chocolate chips.

  14. Transfer the cookie layer to the top of the brownie layer in the pan.

  15. Bake for 22-25 minutes until the top of the cookie is golden brown and a knife inserted in the center comes out clean.
