Vegan Shepherd’s Pie

Ingredients

  • 100gr. vegan soy mince
  • 1/2 zucchini
  • 1 onion
  • 1 handfull spinach
  • Ingredients for the topping
  • 1 small sweet potatoe
  • 1 small carrot

Preparation

  1. Steam or boil the sweet potatoe and the carrot

  2. Drain the water and cover to keep the heat it

  3. Chop the onion and zucchini and sauteé in a pan for a few minutes

  4. Add in the vegan soy mince and season to taste

  5. I added garlic powder, salt and paprika

  6. Stir until for about 5 minutes and add in the spinach

  7. Add some lime juice and continue stirring

  8. Once everything’s well mixed, go back to your steamed veggies and mash them into pureé

  9. Grab an oven tray or baking tin and pour in the cooked “meat” filling, then layer it with the mash sweet potatoe and carrot pureé

  10. You can either pop it into the oven for extra heat or eat it right away!
