Black Bean Goodness
Ingredients
- 1/2 half a cup of grated zucchini
- 1/2 cup of grated carrot
- 1/2 cup of roasted sweet potato
- 1/2 an onion, diced
Preparation
Add 1/2 tsp salt to zucchini and leave aside for 10 mins. Then squeeze to drain out excess water. Add everything to a pan with some coconut oil and 2 tsp of garlic paste, a dash of salt and pepper, 1 tsp of coriander paste, 1 tbsp of soy sauce & 1 tsp of onion powder. Let cook for 5 minutes & then cool.
In a food processor add 1 cup of black beans, 1/3 cup of bread crumbs, 1 tsp of oregano. You could also add some cayenne powder, a drop of liquid smoke and 1 tsp of cumin powder for extra flavour!
Add your cooled zucchini mixture to the food processor, and pulse a few times so that it remains bulky. Add in 1 cup of chopped tempeh and pulse 2 more times.
Heat up your pan again. Form your mixture into burger patties and fry.
