Zucchini Boats with Spicy Tomato Chutney Hummus and Crispy Chickpeas
Ingredients
- 2 Zucchinis
- 8-10 button mushrooms, chopped finely
- 1/2 cup onions, finely chopped
- 1 tomato,finely chopped
- 2 cloves of garlic, minced
- 1/2 teaspoon dried oregano
- 2 teaspoons, dried parsley
- 1 teaspoon red chilli flakes
- 1/2 a teaspoon ground pepper
- olive oil as needed
- 1/2 cup cooked chickpeas (for topping)
- 2 tablespoons of lemon juice
- 1/2 a teaspoon chilli powder
- salt to taste
- For the spicy tomato hummus
- 1 cup chickpeas, cooked
- 2 cloves garlic
- 2 tablespoons tahini
- 1/2 teaspoon ground pepper
- 1/2 teaspoon cumin seeds
- 2 chillies Kashmiri/byadegi variety+1 dried hot chilli
- 2 tablespoons lemon juice
- 3 tablespoons olive oil
- 3-4 sundried tomatoes (optional)
- 1/2 cup chopped tomatoes
- salt to taste
