Zucchini Boats with Spicy Tomato Chutney Hummus and Crispy Chickpeas

Ingredients

  • 2 Zucchinis
  • 8-10 button mushrooms, chopped finely
  • 1/2 cup onions, finely chopped
  • 1 tomato,finely chopped
  • 2 cloves of garlic, minced
  • 1/2 teaspoon dried oregano
  • 2 teaspoons, dried parsley
  • 1 teaspoon red chilli flakes
  • 1/2 a teaspoon ground pepper
  • olive oil as needed
  • 1/2 cup cooked chickpeas (for topping)
  • 2 tablespoons of lemon juice
  • 1/2 a teaspoon chilli powder
  • salt to taste
  • For the spicy tomato hummus
  • 1 cup chickpeas, cooked
  • 2 cloves garlic
  • 2 tablespoons tahini
  • 1/2 teaspoon ground pepper
  • 1/2 teaspoon cumin seeds
  • 2 chillies Kashmiri/byadegi variety+1 dried hot chilli
  • 2 tablespoons lemon juice
  • 3 tablespoons olive oil
  • 3-4 sundried tomatoes (optional)
  • 1/2 cup chopped tomatoes
  • salt to taste
  • olive oil as need for cooking
