Arabic Spiced Herb Flatbread

Ingredients

  • 1 cup flour
  • 2 teaspoons instant yeast
  • 2 teaspoons sugar
  • 2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon mixed spices
  • 1/2 teaspoon cumin
  • 1/2 teaspoon fine sumac
  • 1 teaspoon turmeric
  • 1 cup warm water
  • 1 cup grated carrot
  • 1 cup chopped parsley
  • 1 cup chopped green cilantro
  • 1 cup chopped dill
  • 1 cup chopped green onion

Preparation

  1. In the mixer bowl, place the flour, salt, yeast, sugar, black pepper, cumin, mixed spices, sumac, turmeric, and water, attach the dough hook and run for a few seconds to mix the ingredients.

  2. Add the green onion, cilantro, parsley, dill, carrot, garlic, and hot green pepper, attach the dough hook and run to get a homogeneous dough.

  3. Leave the dough in a warm place for about an hour to double in size and ferment.

  4. In a small plate, put a little oil and shape the dough into small balls then press between your palms to make small discs.

  5. Heat a thick griddle or skillet over fire, place a bread disc on the griddle, wait a few seconds for the bottom to set, then flip to the other side, spread some oil with your fingertips, and wait a few minutes for it to dry, cook, and become golden.
