Coconut Namoura Semolina Cake

Ingredients

  • 3 eggs
  • 1 teaspoon vanilla
  • 1 cup sugar
  • 1 cup oil
  • 1 cup liquid milk
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup semolina
  • 1 cup grated coconut

Syrup and topping

  • 2 cups sugar syrup
  • 2 tablespoons grated coconut

Preparation

  1. Mix all the ingredients to form a batter.

  2. Pour the batter into a 35x25 cm tray.

  3. Let the batter rest for 30 minutes.

  4. Bake in a preheated oven at 180°C for 25 to 30 minutes until golden on top.

  5. Pour room temperature sugar syrup over the hot Namoura.

  6. Sprinkle with the grated coconut topping.
