Corn and Beet Salad
Ingredients
- 1 large beet
- 1 medium red onion
- 1 cup boiled corn
- 1 head Chinese cabbage
- 1/2 cup olive oil
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon mustard
- 1 tablespoon liquid hot sauce
- 1/4 cup chopped walnuts
- 1/4 cup black raisins
- 1/4 cup parmesan cheese
Preparation
Boil the beet.
Peel the beet, let it cool, then cut it into thin sticks.
Cut the onion in half, then slice it.
Cut the cabbage in half lengthwise, then chop it finely.
In a bowl, place the beet, onion, cabbage, and corn.
Sprinkle on top the oil, salt, pepper, mustard, hot sauce, and mix the ingredients together.
Place the salad in a serving dish, sprinkle the walnuts, raisins, and cheese, then serve.
