Shish Tawook Chicken Sandwiches

Ingredients

Dough

  • 3 1/4 cups flour
  • 1 tablespoon instant yeast
  • 1 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/4 cup sugar
  • 1/4 cup corn oil
  • 1 1/4 cups warm milk

Chicken marinade

  • 1/2 teaspoon paprika
  • 1 teaspoon ground coriander
  • 1 teaspoon ginger
  • 1/4 teaspoon black pepper
  • 1 teaspoon salt
  • 4 garlic cloves
  • 1 large onion, quartered
  • 1/4 cup olive oil
  • 2/3 cup yogurt
  • 4 chicken fillets, cubed

Serving

  • Mayonnaise
  • Chopped lettuce

Preparation

  1. For the dough: In the mixer bowl, place 3 cups of flour, yeast, salt, baking powder, and sugar.

  2. Attach the dough hook and run the mixer for a few seconds to mix the ingredients.

  3. Add the oil and milk, then run on low speed to get a smooth dough.

  4. Add the remaining flour if needed, ensuring the dough is smooth and elastic.

  5. Run the mixer on low speed for 3 minutes.

  6. Place the dough in an oiled bowl, brush the surface with a little oil, cover with plastic wrap, and put in a warm place for an hour or until doubled in size.

  7. Cut the dough into discs the size of an egg or slightly smaller.

  8. On a floured surface, roll out the dough pieces with a rolling pin to medium-sized discs.

  9. Place the discs on an oiled tray, leaving 2 inches between each, cover with plastic wrap, and let rise for 15 minutes until doubled.

  10. For the chicken mixture: In a food processor, place onion, garlic, salt, pepper, ginger, coriander, olive oil, and yogurt.

  11. Run on medium speed until a smooth sauce is obtained.

  12. In a deep dish, place chicken pieces, add the sauce, and mix to coat.

  13. Refrigerate for several hours or overnight.

  14. Prepare wooden skewers and thread 2-3 chicken pieces per skewer.

  15. To shape the sandwiches: Heat an electric grill well.

  16. Place chicken skewers on the meat grilling side with raised grates.

  17. Place a few dough discs on the smooth side of the grill.

  18. Flip the chicken to cook well and flip the sandwiches until golden and cooked.

  19. For serving: Open the sandwich or bread from the middle, add a little mayonnaise and lettuce, insert a skewer of chicken into the sandwich, and serve immediately.
