Creamy Coconut Cake with Golden Coconut Topping

Ingredients

  • 4 eggs
  • 1/2 cup unsalted butter (100 g)
  • 1 1/2 cups milk (360 ml)
  • 200 ml coconut milk
  • 1 tablespoon vanilla extract (15 ml)
  • 1 (395g) can sweetened condensed milk
  • 2 tablespoons cornstarch (20 g)
  • 1 cup all-purpose flour (140 g)
  • 100 g shredded coconut
  • 1 teaspoon baking powder (5 g)

Topping

  • 50 g coconut flakes

Preparation

  1. In a blender, place the eggs, milk, coconut milk, vanilla extract, sweetened condensed milk, cornstarch, all-purpose flour, shredded coconut, and baking powder and blend until smooth

  2. Pour the batter into a 22 cm (8.7 inch) diameter baking pan greased with butter and floured

  3. Sprinkle coconut flakes over the batter

  4. Bake in a preheated oven at 180Β°C (350Β°F) for about 50 minutes or until golden
