Creamy Coconut Cake with Golden Coconut Topping
Ingredients
- 4 eggs
- 1/2 cup unsalted butter (100 g)
- 1 1/2 cups milk (360 ml)
- 200 ml coconut milk
- 1 tablespoon vanilla extract (15 ml)
- 1 (395g) can sweetened condensed milk
- 2 tablespoons cornstarch (20 g)
- 1 cup all-purpose flour (140 g)
- 100 g shredded coconut
- 1 teaspoon baking powder (5 g)
Topping
- 50 g coconut flakes
Preparation
In a blender, place the eggs, milk, coconut milk, vanilla extract, sweetened condensed milk, cornstarch, all-purpose flour, shredded coconut, and baking powder and blend until smooth
Pour the batter into a 22 cm (8.7 inch) diameter baking pan greased with butter and floured
Sprinkle coconut flakes over the batter
Bake in a preheated oven at 180Β°C (350Β°F) for about 50 minutes or until golden
