Fluffy Cake with Lemon Mousse
Ingredients
- 3 eggs
- 1 cup (240ml) milk
- 2 cups sugar
- 3 tablespoons margarine, at room temperature
- 3 cups all-purpose flour
- 1 tablespoon baking powder
Lemon mousse
- 1/2 can (about 200g) sweetened condensed milk
- Juice of 1 lemon
- Less than 1/2 can heavy cream
Preparation
Mix the eggs and milk
Add the sugar and margarine and mix well
Gradually add the flour and mix
Add the baking powder and mix until combined
Pour the batter into a greased cake pan
Bake in a preheated oven at 180Β°C (350Β°F) for 30 to 40 minutes, or until a toothpick inserted comes out clean
Let the cake cool completely
Lemon mousse
Blend the sweetened condensed milk, lemon juice, and heavy cream in a blender until smooth
Refrigerate the mousse until well chilled
Assembly
Spread the chilled mousse over the cooled cake
Decorate with lemon zest
Tips
You can use any filling and topping of your preference
Alternatively, serve the cake plain with coffee
