Traditional Brazilian Peanut Brittle Cake
Ingredients
Cake
- 1 cup butter
- 2 cups refined sugar
- 1 cup milk
- 2 cups all-purpose flour
- 1 cup high-quality peanut brittle, crumbled by hand
- 1 tablespoon baking powder
- 4 eggs, separated
Frosting
- 1 can sweetened condensed milk
- 1 cup peanut brittle, crumbled by hand
- 1 can heavy cream
Preparation
Cake
Place butter, sugar, and egg yolks in a mixer and beat well until fluffy
Turn off the mixer, add milk and mix with a spoon
Add the peanut brittle and mix again
Add the flour sifted with baking powder and mix gently
In a separate bowl, beat egg whites until stiff peaks form and carefully fold into the batter with a spatula until homogeneous
Pour into a round cake pan greased with butter and floured
Bake in a preheated medium oven
Frosting
Stir sweetened condensed milk, peanut brittle, and heavy cream together and cook over low heat, stirring occasionally
Cook until it boils and becomes homogeneous
Turn off the heat and pour over the warm cake
