Traditional Brazilian Rice Cake with Coconut and Cheese
Ingredients
- 1 1/2 cups sugar
- 2 cups raw rice
- 1 cup milk
- 1 cup oil
- 1 cup shredded coconut
- 1 cup grated cheese
- 4 eggs
- 1 tablespoon baking powder
Preparation
Soak the rice in water overnight.
The next day, drain the rice, place it in a blender with a small amount of the milk, and blend very well.
Blend until the rice grains disappear, add the remaining ingredients except the shredded coconut and blend until combined, then fold in the shredded coconut.
Pour the batter into a buttered and floured baking pan.
Bake in the oven until golden.
