Gujarati Raw Mango Chundo
Ingredients
- 500 g shredded raw mango
- 600 g sugar
- 1 tsp salt
- 2 tsp red chili powder
- 1 tsp mildly crushed cumin seeds
- A pinch of turmeric powder
- 1 small piece cinnamon
- 3 cloves
Preparation
Shred the raw mangoes using a big shredder.
Place 500 grams of shredded raw mango in a bowl.
Add a pinch of turmeric powder and salt, mix well, and let it sit for 10 minutes to release water.
Add 600 grams of sugar and mix thoroughly.
Let the mixture stand for 30 minutes until the sugar dissolves completely.
Heat a pan and pour in the mango and sugar mixture.
Cook on medium heat for about 25 minutes until the sugar syrup thickens to a one-string consistency.
After cooling, add the cinnamon, cloves, red chili powder, and cumin seeds, then mix well.
The chundo is ready.
Storage and serving
Store the chundo in an airtight container and it can be enjoyed for up to one year.
Serve with thepla, puri, roti, bhakari, or toasted bread.
