Balinese Jukut Bejek Vegetable Dish
Ingredients
- 20 long beans
- 250 ml thick coconut milk
- Salt and sugar to taste
Ground spices
- 3 cloves garlic
- 2 roasted candlenuts
- 1 thumb-sized piece of kencur
- 1 thumb-sized piece of turmeric
Preparation
Cut the long beans into three parts.
Boil until sufficiently soft. Drain. Split the long beans into two and squeeze.
Sauté the ground spices until fragrant, add thick coconut milk. Add salt and sugar to taste. Cook until boiling.
Mix the coconut milk with the long beans. Stir well. Serve.
