Stir-Fried Papaya Flowers and Leaves
Ingredients
- 300g papaya flowers
- Young papaya leaves
- Salt to taste
- Mushroom seasoning to taste
- Sugar to taste
- Chili peppers (optional)
- Edamame or pete
Spice paste
- 5 red shallots
- 5 garlic cloves
- 2 candlenuts
- Chili peppers to taste
- Terasi to taste
Preparation
Boil the papaya flowers and young papaya leaves in boiling water with salt or acid, then drain and slice the leaves. Set aside.
Boil and peel the edamame, or prepare pete if using.
Grind the spice paste ingredients into a smooth paste.
Stir-fry the ground spice paste and sliced chili peppers until fragrant.
Add the boiled papaya flowers and sliced papaya leaves.
Season with salt, sugar, and mushroom seasoning, then stir-fry until well combined.
Add the prepared edamame and stir well.
Taste and adjust seasoning, then remove from heat and serve.
Notes
This dish may have a slight bitter taste that adds to its appeal.
