Jerk Chickpea Wrap with Sweet Potato and Cilantro Sauce

Ingredients

  • 400g chickpeas
  • 1 tsp smoked paprika
  • 1 tsp creole or all purpose seasoning
  • 1 tsp caribbean jerk seasoning
  • 1 tbsp jerk paste
  • 1 large sweet potato, chopped
  • 1 tsp miso paste

Cilantro sauce

  • 1 large bunch of cilantro
  • 1 large bunch of chives, chopped
  • 6-8 scallions, chopped
  • 2 jalapeños or peppers
  • 3/4 - 1 cup lime juice
  • 2 tablespoons agave
  • 1/2 tsp salt
  • 1/2 cup mayo to finish
  • 1/4 avocado

Garnish

  • cucumber
  • dill or parsley

Preparation

  1. Prepare the cilantro sauce by blending cilantro, chives, scallions, jalapeños, lime juice, agave, and salt until smooth, then mix in mayo and avocado

  2. Cook the chopped sweet potato until tender by roasting, baking, or boiling

  3. Combine chickpeas with smoked paprika, creole or all purpose seasoning, caribbean jerk seasoning, jerk paste, and miso paste, then cook until heated through and seasoned

  4. Assemble the wrap by filling with jerk chickpeas, cooked sweet potato, cilantro sauce, and garnish with cucumber, dill, or parsley
