15 Minute Blackened Salmon Tacos

Ingredients

Salmon

  • 1 fillet of salmon
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • olive oil

Pickled onions

  • 2 small red onions or 1 large red onion
  • 3/4 cup apple cider vinegar
  • 1/4 cup water
  • 1/2 teaspoon salt
  • 1 tablespoon maple syrup

Additional components

  • 6 corn tortillas
  • avocado
  • feta cheese

Preparation

  1. Mix the spices in a small bowl

  2. Brush the salmon with olive oil and seasoning

  3. Air fry the salmon at 400°F for 12 minutes

  4. Warm the corn tortillas in the oven

  5. Assemble the tacos by filling with salmon and adding toppings such as pickled onions, avocado, and feta

Pickled onions

  1. Heat the apple cider vinegar, water, salt, and maple syrup over the stove for 3-5 minutes

  2. Thinly slice the red onions

  3. Add the sliced onions to a jar with a lid

  4. Pour the vinegar mixture over the onions

  5. Shake the jar and refrigerate for at least 4 hours before using

Tips

  1. Pickled onions can be made in advance and stored in the fridge for up to 2 weeks

  2. Regular red onions can be used instead of pickled ones if short on time
