Cheese and Tomato Puffs

Ingredients

  • 1 packet puff pastry squares
  • 1 egg yolk
  • 1/2 teaspoon instant coffee

Filling

  • 2 tablespoons olive oil
  • 1 chopped green onion
  • 20 cut cherry tomatoes
  • 1/2 cup crumbled feta cheese
  • a pinch black pepper
  • 1 tablespoon chopped green mint

Preparation

  1. Mix the egg yolk with instant coffee to make the glaze mixture.

  2. Heat the oil in a pan, add the onion, mint, tomatoes, and pepper, stir for a few minutes until wilted, then let it cool.

  3. Preheat the oven to 200°C and prepare baking sheets with parchment paper.

  4. Place the pastry squares on the sheet.

  5. Using a knife, cut triangles from the corners without separating them, then brush the edges with the glaze mixture.

  6. Fold the sides over each other to form a diamond shape.

  7. Brush with the glaze mixture.

  8. Place the cheese in the center of the pastry, then distribute the tomatoes.

  9. Bake the puffs for 15 minutes until golden.
