Fried Stuffed Potato Cones
Ingredients
- 1/2 packet small wonton wrappers
- 1/4 cup olive oil
- 3 large potatoes, cut into very small cubes
- 5 large eggs
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup crumbled feta cheese
- Optional chili to taste
For frying
- Corn oil
For sealing mixture
- A little flour
- A little water or egg white
Preparation
In a deep bowl, place the eggs, salt, pepper, and chili to taste, and use a hand whisk to beat them lightly then set aside.
In a wide skillet, heat the olive oil and add the cubed potatoes, stir until they wilt and become slightly soft.
Add the eggs to the potatoes, stir to combine, and cook for a few minutes until the eggs are set then let cool slightly and add the feta cheese.
For the sealing mixture, in a bowl combine a little flour and water to make a liquid paste or use egg white.
Shape a wonton wrapper into a cone and use a bit of the sealing mixture to hold it in place.
Stuff the cone with the potato and egg mixture, seal it well with more sealing mixture.
In a deep skillet, heat corn oil and fry the cones until golden brown.
