Homemade Spicy Mint Hummus

Ingredients

  • 2 cups boiled garbanzo beans (skin removed)
  • 1 tablespoon lemon juice
  • 1/4 cup fresh mint
  • 2 cloves garlic
  • 1/4 cup tahini
  • 1/3 cup olive oil plus 2 tablespoons
  • Salt
  • 1/4 teaspoon crushed red pepper
  • A few teaspoons of water

Preparation

  1. Process all the ingredients in a processor until smooth and creamy.

  2. Add some cold water to get the right consistency.

  3. Drizzle 2 tablespoons olive oil before serving.

  4. Serve 2 tablespoons olive oil and crushed red pepper.

Tips

  1. Remove the skin from garbanzo beans as it makes the consistency smooth and creamy.

  2. This makes a great pick-me-up snack and pairs well with colorful veggies and blue corn chips.
