Homemade Spicy Mint Hummus
Ingredients
- 2 cups boiled garbanzo beans (skin removed)
- 1 tablespoon lemon juice
- 1/4 cup fresh mint
- 2 cloves garlic
- 1/4 cup tahini
- 1/3 cup olive oil plus 2 tablespoons
- Salt
- 1/4 teaspoon crushed red pepper
- A few teaspoons of water
Preparation
Process all the ingredients in a processor until smooth and creamy.
Add some cold water to get the right consistency.
Drizzle 2 tablespoons olive oil before serving.
Serve 2 tablespoons olive oil and crushed red pepper.
Tips
Remove the skin from garbanzo beans as it makes the consistency smooth and creamy.
This makes a great pick-me-up snack and pairs well with colorful veggies and blue corn chips.
