Chicken Tantuni with Homemade Lavash
Ingredients
- 600g chopped chicken
- half cup vegetable oil
- salt
- 1 teacup water
- red pepper flakes
- 1 teaspoon black pepper
Lavash bread
- 1 teaspoon fresh yeast or 1 teaspoon dry yeast or instant yeast
- 4 tablespoons yogurt
- 2 teacups warm water
- 1 teaspoon salt
- 6.5-7 teacups flour
Preparation
Place the chopped chicken in a pan and add vegetable oil and salt, then stir-fry until cooked
Add water and continue cooking until the water is nearly evaporated
Stir in red pepper flakes and black pepper, mix well; add more oil if needed
For the lavash, combine all lavash ingredients, knead the dough, and divide into 10 pieces to shape into balls and roll out
Cook each lavash on a hot pan until done, then stack them in a clean bag to keep soft
Assemble the tantuni by wrapping the chicken mixture in the lavash, cut with a knife, place on a plate, drizzle with yogurt and some of the cooking oil
Tips
For thinner lavash, divide the dough into 12-13 pieces instead of 10
