Easy Fig Chutney with Red Wine and Onions

Ingredients

  • 300 g red onions
  • 500 g fresh figs
  • 2 tbsp neutral cooking oil (e.g., rapeseed oil)
  • 200 g brown sugar
  • 200 ml red wine (alternatively: white wine)
  • 50 ml red wine vinegar (alternatively: white wine vinegar or white balsamic vinegar)
  • 1/2 tsp salt
  • freshly ground pepper, to taste

Preparation

  1. Prepare 4 (200ml) jars by scalding with boiling water or boiling in a pot, then let them drain on a clean towel

  2. Peel onions, halve them, and dice finely. Wash figs, pat dry, and cut into 2 cm pieces, including the skin

  3. Heat oil in a large pot. Sauté onion cubes over medium heat for 2-3 minutes, stirring occasionally. Add figs and brown sugar, and simmer for 1 minute. Deglaze with red wine and red wine vinegar. Add salt and freshly ground pepper. Simmer the mixture over medium heat, stirring occasionally, for 6-8 minutes until it reaches a marmalade-like consistency

  4. Fill the hot chutney into the prepared jars and seal. Let it steep for at least one night. The chutney will keep unopened for about 3 months
