Easy Vegan Quinoa Coconut Pudding

Ingredients

  • 1/2 cup water
  • 1/3 cup quinoa
  • 1/3 cup coconut milk
  • 1/2 ripe banana, mashed
  • 1/2 tsp cinnamon
  • 1/4 tsp vanilla extract

Toppings

  • berries
  • nuts
  • shredded coconut

Preparation

  1. Rinse the quinoa and put it in a saucepan with the water. Bring to a boil over low heat.

  2. Cook the quinoa for about 10 minutes, or until it has absorbed the water.

  3. Add the coconut milk, banana, cinnamon and vanilla extract and let it simmer for another 5 minutes on low heat.

  4. Let the quinoa cool for a few minutes. Put the porridge in glasses and finish with berries, nuts and coconut.
