One Pan Chicken Pasta

Ingredients

  • 400g chicken breast (diced)
  • Salt and pepper to taste
  • 1 tbsp paprika
  • 1 tbsp piri piri seasoning
  • 3-4 diced garlic cloves
  • Chicken stock pot
  • 300ml water
  • 150g penne (dry weight)
  • 75g frozen peas
  • 1 tbsp mixed herbs
  • 2 tbsp tomato puree
  • 50g light soft cheese
  • 10g grated parmigiano
  • Sprinkle of dried parsley

Preparation

  1. Season the chicken with salt, pepper, paprika, and piri piri seasoning.

  2. Cook the diced chicken in a single pan over medium heat until browned.

  3. Add garlic and cook for about one minute until fragrant.

  4. Dissolve the chicken stock pot in water and pour into the pan along with penne, peas, mixed herbs, and tomato puree.

  5. Simmer the mixture until the pasta is tender and the liquid is mostly absorbed.

  6. Stir in the light soft cheese and grated parmigiano until melted and combined.

  7. Sprinkle with dried parsley and serve immediately.

Tips

  1. This dish is quick and easy with minimal washing up, ideal for dinner inspiration.

  2. It serves two people and is high in protein.
